Yogurt and Orange Sponge Cake Recipe for diabetics

Today we bring you a delicious recipe of yogurt and orange cake, suitable for diabetics, which no doubt will leave you wanting more. This kind of sponge cakes are very light  and you can enjoy it for breakfast, dinner or a snack, and even, after eating.

Recipe for 4 persons (12 portions)


* 3 oranges

* 2  natural yogurts without sugar (we booked one for  measures) – 6 eggs

* 2 envelopes of baking powder

* Special Flour for cakes (unleavened) –  (6 yogurt)

* Liquid stevia or  sweetener (½ yogurt)

* Extra virgin olive oil (2 yogurt)

* Butter



Step 1: Beating very well the eggs. If you can do it with a blender and rods much better. To get the egg to form a layer of bubbles so that the cake comes out more spongy.

Step 2: To the bowl where we have beaten eggs we are adding, little by little, two yogurts, grated rind of the skin and the juice of the three oranges. Mix everything well and add the two yogurts of extra virgin olive oil. We beat until it is a uniform mass.

Step 3: Add to the mixture above the liquid stevia yogurt and we beat with consistency.

Step 4: Add to the bowl the yogurt 6 special flour for cakes and the two envelopes of yeast. Beat again until the dough is compact.


Step 5: To spread the mould, first by covering it with butter and then sprinkle with a little flour of wheat normal by all sides of the mould.


Step 6: Preheat oven to 200 degrees for 5 or 10 minutes, depending on how long it takes to heat your oven.


Step 7: Pour the mass of the cake that we had prepared into mould and put it in the oven. Lower the temperature to 180 degrees and cook the cake for  45 minutes.


Step 8: It is important not to open the oven during the first half hour of cooking or the cake will not raise. If the 30-35 minutes you see that cake is not done yet, but that  it begins to burn above, you can put a little aluminum foil on top of the cake.


Step 9: Let cool the cake and then, remove it from the mould.


Step 10: To Serve and enjoy!
