After presenting the beneficial properties of avocado, today we are going to focus on explaining how to store avocados so that you can extend their useful life and enjoy them for even longer, while keeping their flavour, colour and properties intact.

Because, although it is delicious and it is very beneficial, the truth is that the avocado is a very delicate fruit that does not last long if it is not preserved correctly, so it is important to take a series of precautions for its good conservation.

Aware of this, below, we are going to show you how to keep avocados intact  to control their degree of ripeness and enjoy their maximum flavour, and also how to store an open avocado once you have cut it in half and opened it.


How to store whole avocados?

When talking about preserving whole avocados, we have to differentiate between green avocados and already ripe avocados.

In case of green avocados, and with the skin with a softer tone, they generally need about 7 days to ripen at room temperature (18 / 24ºC), and it is important that they do not receive direct sunlight.

Remember also not to put the avocado in the refrigerator without it having ripened, otherwise it will never get a smooth black skin, which is what to aim for so that the avocado is flavourful and not dry.

Differentiating a ripe avocado from another is not easy. As we have said above, one has a light green colour and is harder, unlike a mature one.

If you want to speed up this process, try storing it in a paper bag with a ripe banana. In this way, you will be able to reduce the ripening time from seven to four or even three days.

In the other case you have ripe avocados, which you should never store at room temperature, especially if you have already cut them, since otherwise you will probably have to throw them away since they will no longer be edible.

To store ripe avocados correctly, you should put them in the refrigerator, since the cold will reduce the speed of ripening, preventing the avocado from rotting overnight.

How to preserve half an avocado?

Once opened, the avocado tends to lose its flavour after a few hours, and also to get a brownish tone that makes it much less appetizing.

This is because once the avocado is cut, an oxidation process begins, due to its high fat content and low sugar content.

To prevent this from happening, knowing how to store half an avocado is essential, and, below, we will explain you how:

  • The most common way to store an opened avocado is to keep it in the fridge, but the truth is that this is not necessary.
  • You can also choose to store opened avocados at room temperature, but for this you must place them in a paper bag with a red onion, which will keep their freshness and flavour intact.
  • And, in case you are going to consume the opened avocado the following day, there is also the option of keeping it in a container with cold water. In this way, the cold water will play a role similar to that of the cold in the refrigerator.

If instead you prefer to store the avocado open in the fridge, wrap it in plastic wrap so that it is hermetically sealed and place it in one of the refrigerator drawers, checking its status daily so you can eat it before it is too late.

In this way you will rebuild the avocado and reduce the exposure of its interior as well as its oxidation.

In any case, we recommend you leave the avocado seed inside, since it is proven that the pit slows the oxidation rate and allows you to keep it in good condition for a longer time, since in this way it will be exposed to less superficial oxidation.


The ideal would be to buy the avocados already ripe or almost ripe and eat them on the same day or the next day.
